Makes ~1 cup seasoning blend

Smoky, spicy, and garlicky, this fry seasoning is built for anything coming out of hot oil. Dark chili powder gives it depth; cayenne gives it heat.
Ingredients
- 28g (1 oz) granulated garlic
- 28g (1 oz) onion powder
- 28g (1 oz) cayenne
- 28g (1 oz) smoked paprika
- 85g (3 oz) salt and pepper mix
- 480ml (2 cups) dark chili powder
Instructions
- 1Combine all ingredients in a bowl. Stir until evenly mixed.
- 2Store in a sealed container.
Cook's Note
The 2 cups of dark chili powder is the backbone here, use a good one. Cheap chili powder with lots of filler makes the blend flat. Taste the finished blend on a pinch of fried food before coating a full batch.
Best Served With
Use on fried chicken, fries, calamari, or any fried protein.
Why This Recipe Works
Smoked paprika and dark chili powder together give the blend a roasted, almost meaty flavor that stands up to hot oil. Cayenne adds heat that coats the palate rather than hitting all at once.
Make It Yours
- Add dried thyme and oregano for a more classic Cajun direction.
