Cheese: Whipped Goat

Light, tangy, and airy, this whipped goat cheese folds whipped cream into soft goat cheese for a spread that is richer than plain goat cheese but still bright and clean.

Ingredients

  • 510 g (18 oz) heavy cream
  • 510 g (18 oz) goat cheese
  • 1 tsp kosher salt
  • 1 tsp white granulated sugar

Cook's Note

Fold gently, overworking the mixture after the cream is whipped will deflate it and you will lose the light texture.
