Bright, spicy, and tart, this citrus broth is a quick poaching liquid or marinade base built from three citrus juices and serrano heat. It's punchy and meant to be used in small amounts.
Ingredients
- 150 ml (½ cup) lime juice
- 150 ml (½ cup) lemon juice
- 150 ml (½ cup) orange juice
- 3½ tbsp agave syrup
- 1 serranos, sliced
- Salt to taste
Instructions
- 1
Mix all the juices, agave, and serranos together.
- 2
Season with salt and taste, adjust lime or agave as needed.
- 3
Cook's Note
Taste before adding salt, the citrus and agave already carry a lot of flavor. Season last and lightly.
Best Served With
Used for poaching shrimp, as a marinade base, or as a finishing drizzle on ceviche.
Why This Recipe Works
Three citrus juices together are more layered than one, lemon adds sharpness, lime adds a distinct grassy citrus note, and orange rounds it out with sweetness. The serranos add heat that lingers after the initial tartness.
Make It Yours
- Add fresh grapefruit juice for a more bitter edge.
- Include a smashed garlic clove.
- Use honey instead of agave for a slightly floral sweetness.
Leftover Strategy
Best in the first 24 hours. Keeps refrigerated for 3 days.
