Lazy Broiled Chicken Thighs

Hot, glossy, and deeply savory, these lazy broiled chicken thighs go from marinade to broiler to table with very little work. The edges caramelize fast, the center stays juicy, and the pan juices do the rest.

Ingredients

  • pounds 680 g boneless, skinless chicken thighs
  • ½ cup 120 ml All-Purpose Savory Marinade
  • Neutral oil for the pan
  • Freshly ground black pepper

Instructions

  • Toss the chicken thighs with the marinade until evenly coated. Let sit while the broiler heats, about 5–10 minutes. For best results, marinade for 2-5 hours.
  • Heat the broiler to high and lightly oil a rimmed, broiler-safe sheet pan.
  • Arrange the chicken in a single layer, letting excess marinade drip off. Season lightly with black pepper.
  • Broil for 6–7 minutes, until the edges begin to caramelize. Flip and broil another 6–8 minutes, until cooked through and glossy.
  • Rest for 2 minutes, then slice or serve whole, spooning the pan juices over the top.
